These are pumpkin spice cupcakes with cream cheese icing that my mom, Danielle and myself made for Thanksgiving for dessert.

7 Day Carnival Cruise
Day 1: Day at Sea
Elegant Dinner Night
Day 3: Cozumel, Mexico
This was my favorite place that we went to on this cruise. I would definitely recommend doing your own activity on this island instead of excursion with Carnival. We rented a scooter for $25....if they ask for higher bargain with them! It was very easy to drive on this island. We went to some pretty neat places while driving around!
Day 4: Isla Roatan, Honduras
I would recommend getting a van with a group of people (but not at the carnival dock). If you walk a little bit farther down away from the Carnival dock you can get a better deal. We worked a deal with a company for $10 a person. They brought us to a beach where we got to snorkel, swim and relax. I would highly recommend snorkeling on this island. We saw some beautiful colored fish.
Day 5: Belize
Justin and I did an excursion through Carnvial to see the Xunantunich Mayan Ruins. The only way I would recommend to exploring this country would be through an excursion through Carnival. Belize is a very rough country. They have guards and policemen everywhere.
I would highly recommend this excursion. We got to see the ruins, walk up one of their main temples, try the national dish of Belize, see different little towns of Belize and learn about the Belizan culture.
Day 6: Day at Sea
Day 7: Tampa
Elegant Dinner Night
Day 2: Grand Cayman, Cayman Islands
We rented a scooter. It was a little stressful and crazy driving on their roads. They drive on the opposite side of the road. I would recommend doing a Carnival excursion on this island. If you want to snorkel, I would suggest finding a company when you get there. It is way cheaper than doing it with Carnival and very easy to find when you get off the boat. Day 3: Cozumel, Mexico
